Persistent itching, ear scratching, paw licking, recurring skin inflammation, sometimes loose stools — an adverse food reaction is one common cause, and also one of the most frequently mishandled. This guide walks through what the evidence actually says, and how to run the work-up so it gives you a real answer.
The allergen rankings
A critically appraised review of canine cutaneous adverse food reactions (CAFR) compiled data on 297 confirmed cases and produced this ranking:

The pattern is not subtle: the top four are the proteins and grains dogs eat most often.
It is not that beef is harmful. It is that beef is everywhere.
The commonest misreading of this table is to treat it as a toxicity ranking. It is not.
A food allergy requires the immune system to become sensitised to a protein first. The more of a protein a dog eats, and the longer it eats it, the greater the opportunity for sensitisation. Beef and chicken top the list precisely because they are the most widespread proteins in commercial dog food — not because there is anything wrong with them.
Conversely, pork and fish sit at 2% each, and turkey and venison appear even less often in comparable reviews — not because they are inherently hypoallergenic, but because most dogs have had little exposure to them. That is the logic behind a novel protein: pick something your dog has barely eaten, so its immune system has had no chance to learn to react.
How a dog food allergy actually develops
A dog food allergy is an immune reaction to a dietary protein — usually a medium-to-large glycoprotein that the immune system mistakes for a threat. Both antibody-mediated and cell-mediated pathways are involved, which is why signs can appear hours or even days after a meal rather than within minutes.
Two consequences follow from this, and both matter for how you run a trial:
- Prior exposure is required. A dog cannot be allergic to a protein it has never met. Allergies therefore develop to familiar foods, not exotic ones — the opposite of what many owners expect.
- Reactions are delayed and cumulative. Because the response is partly cell-mediated, a single slip today may not flare until later in the week, which is exactly why a strict eight-week window is needed to see a clean signal.
Allergy, intolerance and environmental itch: not the same thing
Owners tend to use “allergy” for anything that upsets the dog. It helps to separate three ideas:
- Food allergy — an immune response to a protein. Often shows as itchy skin and ears, sometimes with gut signs. Diagnosed only by an elimination diet.
- Food intolerance — a non-immune reaction, such as trouble digesting a fatty or unfamiliar ingredient. Typically gut signs (loose stools, gas) without the immune involvement.
- Environmental allergy (atopic dermatitis) — a reaction to pollen, dust mites or mould, not food. It can look identical on the skin, and a dog can have both at once.
This overlap is the single biggest reason a food trial gets misread: if a dog also has an environmental allergy, its skin may only partly settle on a novel protein, and an owner concludes “the food didn’t work” when in fact food was one of two problems.
Changing food is not a diagnosis
This is the step that most often goes wrong. Buying a bag labelled hypoallergenic, feeding it for two weeks and deciding things look a bit better is neither a diagnosis nor enough evidence to act on. Confirming a food allergy requires a structured elimination diet:
- Choose one single novel-protein recipe — the protein your dog has had least exposure to.
- Feed it for 8 weeks (some dermatologists advise 8–12).
- Add no other protein source during that time — no treats, flavoured dental chews, flavoured supplements, human food, or the slice of ham a friend hands over.
- Record symptoms weekly — itch severity, location, skin condition, stools.
- Reintroduce foods one at a time once symptoms improve, watching for 1–2 weeks each, to identify the actual trigger.
Step 3 is the one most commonly broken. A single cheese cube, one jerky strip, one flavoured chew can invalidate the entire trial — because you can no longer tell what caused any change you see. “I tried hypoallergenic food and it didn’t work” is, eight times out of ten, not a problem with the food. It is a problem with the eight weeks.
Why a single protein matters
The purpose of an elimination diet is to reduce the variables to one. The fewer protein sources in the recipe, the clearer the conclusion when you reintroduce. Multi-protein “hypoallergenic” formulas — one containing both turkey and duck, say — are of limited use during the trial phase: if the dog reacts, you cannot tell which protein did it.
Reading the label: the hidden proteins that wreck a trial
A recipe is only “novel” if every protein in it is novel. Labels make that harder to verify than it should be, so a few habits help:
- Read the full ingredient list, not the front of the pack. A product headlined “salmon” can still contain chicken fat, egg or dairy further down. The AAFCO guide to reading pet-food labels ↗ explains how naming rules work.
- “Grain-free” does not mean hypoallergenic. Grains are far down the rankings; a grain-free food built on beef or chicken is still a high-exposure protein.
- Watch the treats and chews. Flavoured dental sticks, training treats and even some flavoured wormers and toothpastes carry familiar proteins that quietly break the trial.
- Check it is nutritionally complete. A trial food is fed as the sole diet for two months, so it needs to be a complete diet, not a topper. The FDA explains what “complete and balanced” ↗ actually means.
Running a dog food allergy elimination diet, week by week
A worked example makes the timeline concrete. Say a four-year-old dog with year-round itchy paws and recurring ear inflammation has always eaten chicken-based food. A vet rules out fleas and treats a secondary skin infection, then starts a strict pork-only trial — pork being a protein this dog has barely met.
- Weeks 1–2: transition and baseline. Skin may not change yet, and old flares can even linger. This is normal — you are clearing the system, not expecting a miracle.
- Weeks 3–5: if food is a driver, itch scores and ear flares usually begin to ease. Keep the weekly diary going; memory flatters progress.
- Weeks 6–8: the clearest read. A dog whose signs have largely settled on one protein has given you real information.
- The re-challenge: reintroduce the old chicken diet. If the itch returns within one to two weeks, the diagnosis is confirmed; if nothing happens, food was probably not the main problem.
The re-challenge feels counter-intuitive — deliberately provoking a dog that finally looks well — but it is what separates a genuine dog food allergy diagnosis from a lucky coincidence.
The Hong Kong reality
Two local factors make trials harder to run cleanly here. First, Hong Kong’s warm, humid climate keeps skin barriers under year-round stress and encourages the secondary yeast and bacterial infections that ride on top of allergies — so a dog’s skin rarely gets an “off season” to recover.
Second, our food culture is generous. Shared human meals, char siu and roast-meat offcuts, and the wall of flavoured treats in every pet shop mean a strict eight weeks takes real discipline — often across a whole household, helpers and grandparents included. Agreeing the rules with everyone who feeds the dog, before day one, does more for a trial than any single food choice.
